Caldo de Pollo con Bolitas de Platano (Chicken Broth with Plantain Dumplings)

Ingredients:
1 large green plantain, peeled and shredded
through the next-to-finest side of the grater
10 cups chicken stock 1/2 tablespoon salt
1/2 tablespoon black pepper
1 cup bok choy leaves cut in very thin strips
Directions:
1 Form dumplings from 1/2 tablespoonfuls of shredded plantain and set aside. Bring the
chicken broth to a boil in a large pot. Add the salt, pepper, and dumplings. Reduce the
heat to medium-low and cook for 15 minutes. Add the bok choy and cook for another 5
minutes.
