Sorullitos de Maiz (Corn Meal Fritters)
3/4 to 1 cup milk
1 cup corn meal
1/2 cup all purpose flour
2 tablespoons sugar
oil (for frying)
Mix all ingredients with exception of milk and oil.
Heat milk in saucepan over mdium and remove saucepan from heat when milk gets hot (do
not allow to boil).
Whisk hot milk into mix a little at a time until it has a consistent but not liquidy
texture. You will end up using about 3/4 cup of hot milk.
Heat oil on medium heat.
Meahwhile form sorullos to miniature "hot dog" shapes about 2 inches long.
Carefully place sorullos in heated oil and fry turning once so that they are golden brown
on both sides.
Remove sorullos from frying pan and drain on a plate lined with paper towel.
Serve immediately plain or with a dipping "sauce" of 1/4 cup ketchup, 1/4 cup mayonnaise
and 1 head of garlic and a little Pique (Homemade Puerto Rican Hot Sauce) minced all
