Mojo Isleno (Tomato Olive Sauce)
1/2 cup virgin olive oil
1 onion, minced
3/4 (10 ounce can)cup roasted red peppers, minced with their juice
18 manzanilla olives, sliced
2 tablespoons capers
2 tablespoons garlic, minced
2 cups tomato sauce
2 bay leaves
1 1/2 tablespoons vinegar
salt to taste
In small skillet, warm oil over medium heat.
Add onion and garlic, saute until soft.
Stir in peppers, olives, and capers. Sautee 2 minutes.
Add tomato sauce, bay leaves, and vinegar.
Bring to boil, lower heat, simmer uncovered 15 minutes.
Season to taste with salt.
