Carne Bif Tradicional (Corned Beef)
Ingredients:
12 ounce can corned beef
2 tablespoons oil, preferable extra virgin olive oil
1 large cooking spoon Basic Sofrito (about 1/4 cup or 3 cubes)
1/2 teaspoon dried organo, crushed
1 small can spanish style tomato sauce
1 packet sazon
salt and pepper to taste (about 1 teaspoon each) or Homemade Dry Adobo Seasoning
1/2 cup water
1 large potato or sweet plantain, peeled, sliced and fried
1/2 cup sweet corn kernels (fresh, frozen, or canned) or mixed vegetables
Directions:
Heat oil in non stick pan.
Add Sofrito, tomato sauce, oregano, and sazon.
Simmer until fragrant, about two minutes.
Empty contents of corned beef can into pan.
With fork break most clumps, not all clumps.
Thoroughly combine mixture making sure meat is coated completely with sauce.
Add fried potato or plantain and your choice of vegetables.
Cover and simmer on low heat for about 30 minutes.
