Yuca Con Mojo (Yuca with Garlicky Olive Oil Dressing)

Ingredients:
4 large garlic cloves, peeled and finely chopped
1/4 teaspoon dried oregano, crushed
1/2 teaspoon red wine vinegar
1/2 cup extra virgin olive oil
2 pounds fresh yuca (cassava) or 24 ounce bag frozen Goya Yuca
2 quarts water combined with 1 tablespoon salt
salt and pepper to taste
lemon wedge, sprinkle to taste

Directions:
Combine the garlic, oregano, and oil. Set aside.
Peel the yuca (if using fresh yuca) and coarsely chop.
Boil salted water in a deep pot.
Add yuca and cook 30 minutes over medium high heat or until tender when poked with a
fork.
Drain and/or pat dry with paper towels. Set aside. Keep warm.
Add all remaining ingredients to large pan.
Sautee until fragrant and heated through, do not allow to boil, do not allow garlic to
brown.
To serve, drizzle warm olive oil mixture over yuca and sprinklw with salt and pepper to
taste.
