Yuca Con Mojo (Yuca with Garlicky Olive Oil Dressing)
4 large garlic cloves, peeled and finely chopped
1/4 teaspoon dried oregano, crushed
1/2 teaspoon red wine vinegar
1/2 cup extra virgin olive oil
2 pounds fresh yuca (cassava) or 24 ounce bag
frozen Goya Yuca
2 quarts water combined with 1 tablespoon salt
salt and pepper to taste

Combine the garlic, oregano, and oil. Set aside.
Peel the yuca (if using fresh yuca) and coarsely chop.
Boil salted water in a deep pot.
