Sofrito Basico (Basic Sofrito)
3 green bell pepper, deseeded, quartered
3 red bell pepper, deseeded, quartered
2 cubanelle pepper, deseeded, quartered
5 garlic heads, medium, peeled
4 onions, large, peeled, quartered
1 cilantro, bunch
1/2 cup vegetable oil
2 recao bunches (about 50 leaves)
20 ajicitos , tops removed
6 ice cube trays
big bowl or pot
blender or food processor
Ingredients can be worked in batches and later mixed thoroughly in a large pot or bowl.
Place all ingredients in blender or food processor.
Add oil or small amount of water at a time just to keep mixture moving in blender.
Spoon this mixture into ice cube trays and freeze.
Once hardened, place in plastic freezer bags so the sofrito doesn't get freezer burn.
Now you have fresh sofrito to last you for months. Anytime you are going to cook some
rice, soup, beef stew, beans, etc. just throw in 2 cubes of sofrito. Add this mixture to
anything you want to spice up!
