Quimbombo Guisado (Stewed Okra)
1/2 pound fatback, diced, or 6 slices bacon, chopped
1 cup sliced yellow onion
1 pound fresh plum tomatoes, seeded and chopped
1/2 cup basic Recaito combined with
1 cup tomato sauce
1-1/2 pounds fresh okra, tips trimmed
1/2 cup chicken stock or water
1 Saute the fatback or bacon in a Dutch oven over medium-high heat. Discard the
excess fat. Add the onion, tomato, and recaito mixture. Bring to a boil and cook for 5
minutes. Add the okra and chicken stock. Bring to another boil. Reduce the heat and
simmer for 15 minutes, or until the okra is cooked.
2 Variation: You can add 2 fresh ears of corn, cut into 1-inch pieces, when you add the
