Polvorones (Shortbread Cookies)
2 1/4 cups flour
1/4 teaspoon nutmeg
3/4 cup butter
1/4 cup vegetable shortening
1 1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 cup sugar
Preheat oven to 350 Fahrenheit.
In medium bowl thoroughly combine flour and nutmeg. Set aside.
In large bowl beat butter, shortening, and extracts until smooth.
While beating, gradually add sugar.
Slowly blend in flour. Dough should end up slightly moist.
Using two teaspoons, not your hands, form small balls and place on ungreased cookie
Lightly press down on the dough. (at this point you can make the cookie plain or for a
you can place in the center of each cookie a piece of chopped cherry, guava paste, or
other tropical fruit preserve)
Bake 20 minutes or until golden brown.
Let cool before serving.
