Ensalada de chayote y bacalao (Chayote and Salted Codfish Salad)
1 pound salted codfish, boiled to remove most salt
4 scallions, chopped
1 large chayote or 2 medium chayote, chopped and cooked until fork tender
1 red pepper, chopped
¼ cup olives, chopped
¼ cup cilantro, chopped
½ cup extra virgin olive oil
1/2 teaspoon dried oregano, crushed
¼ cup white vinegar
3 teaspoons garlic cloves, minced
1 lemon, juiced
salt to taste
In a large bowl mix all ingredients and adjust seasoning to taste.
Serve over a bed of lettuce.
